Akira Back
Akira Back (born Sung Ook Back in 1974 in Seoul, Korea), is a Michelin-Starred [1] chef. He was given the nickname "Akira" by a family friend from Japan ("Ook" translates to "Akira" in Kanji).
Early life
Back was born and raised in Seoul, Korea. He took a serious interest in baseball at a young age and decided to move to Japan to pursue it. Back's baseball career ended shortly afterward, when his father's business took their family to the U.S. in 1989, eventually ending up in Aspen, Colorado.
At age 15, Back began his snowboarding career and spent 7 years on the professional snowboarding circuit. He appeared in various extreme sports movies and was featured in the sport's top trade publications.

Born in Seoul, Korea and raised in Aspen, Colorado, Akira Back moved to the rocky mountain state at the age of 15-years-old for his father to pursue the family business. Back picked up snowboarding as a hobby which led him to pursue the professional circuit where he appeared in a handful of extreme sports movies and garnered praise from the sports top trade publications. During this time, Back began working at a local Japanese restaurant to supplement his income. After seven years on the pro-snowboarding circuit, Back realized that he felt the same thrill in the kitchen as he did on his board, shaping his decision to pursue a full-time culinary career.
Back attended and completed his cooking education at the International Culinary School at The Art Institute based in Colorado, establishing the framework of his technique and amplifying his knowledge of Asian cooking, allowing him to incorporate his artistic vision and Korean heritage. Combining his passions for adventure, travel and culinary exploration, Chef Back toured extensively throughout Japan and Europe, studying under top celebrity chefs and industry leaders. It was during this period that Chef Back learned the value of using rare and exotic ingredients.
His repertoire of restaurants include the famed Yellowtail Japanese Restaurant & Lounge located inside the Bellagio Resort & Casino in Las Vegas that has become a dining institution breeding several new concepts. Akira Back’s namesake restaurant, known for its limitless creativity in reshaping modern dining to create a distinguished experience, continues to span across the globe with locations in Dubai, Toronto, Singapore, Thailand, Vietnam, Seoul with new venues on the cusp in London, Paris, Dallas, Houston, Delray Beach, Marrakech and Riyadh expected within the next 2 years. DOSA, chef Back’s award-winning concept was bestowed consecutive Michelin stars for eminence in innovative cuisine and service.

Chef Back has also been seen on NBC’s “The Today Show,” Food Network’s “Best Thing I Ever Ate,” The Cooking Channel’s “United Tastes of America,” as well as KBS’ “Success Mentor” which airs in Korea.
Iron Chef
During the 2006 Food & Wine Magazine Classic in Aspen, a producer of Iron Chef America approached Back after tasting a menu that Back had presented. Back immediately agreed to appear on the show, saying that he loved it and "grew up with it".[2] On an episode that aired March 16, 2008, he lost to Bobby Flay in a spinach battle. It was stated that he studied under Iron Chef Masaharu Morimoto.[3]

In the Fall of 2017, the 2018 Seoul Michelin Guide awarded Chef Back’s famed restaurant DOSA one Michelin Star for its excellence in innovative cuisine and service.
