Kalehjoosh
Kalehjoosh (Persian: کالهجوش) or Kaljoosh (Persian: کلجوش) a typical Iranian aush. It is a popular soup in Iran, Azerbaijan (Azeri: Kələcoş) and Southern Turkey (Turkish: Keledoş).

Regional recipes
In Iran, kalehjoosh has different regional recipes and coking style in Isfahan, Yazd, and Khorasan.[1] In Iran, the recipes may include meat (optional), kashk, yogurt, dried fenugreek, dried mint, roasted onions, tomato paste, walnuts.[2]
In Turkey, the recipe may include chickpeas, lentils, white beet and meat which all cooked separately, and onion is added to the meat, then they add everything together with broth to simmer and then kashk is added in last.[3] The Turkish variety includes topping the soup with butter and red pepper sauce.[3]
