Grilled cold noodles

Grilled cold noodles (Chinese: 烤冷面, pinyin: kǎolěngmiàn) is a local specialized snack of the Chinese province of Heilongjiang. It is a side dish, usually sold at night markets or roadside stands rather than in restaurants.

History

According to legend, a Korean man who sold snacks at the backdoor of Second Middle School of Mishan City liked to Grilled some cold noodles for himself as a dish to go with wine. Unexpectedly, students of Second Middle School of Mishan City found that Grilled cold noodles was very delicious, and Grilled cold noodles became very popular in Mishan.[1]

Variations

  • Fry: Popular primarily in Mishan. The noodles are fried and then brushed with sauce.
  • Teppanyaki: This is the most common way to cook Grilled cold noodles. Teppanyaki cold noodles with onion, eggs and sausage.

Chemical analysis

Grilled cold noodles are known for their chewiness. The chewy texture of Grilled cold noodles comes from gluten. Gluten is a kind of elastic material, its molecular structure is more complex, it is a condensation polymer composited by more than 20 amino acid, the main component is non-polar gliadin and polar glutenin.[2]
